Being homeless is a tough situation that’s extremely hard to overcome. However, that’s what Brooke Coleman did.
Five years ago, she didn’t have a home, she was a single mother, pregnant, and she was just trying to make ends meet. However, she didn’t give up. She still had a dream, and she wanted to achieve it.
“I was going through a struggle,” Coleman said in a recent interview. “One night I looked at my family and decided I was never going to be in that situation again. I knew if I worked hard, I would never have to go back to that shelter.”
One night, she looked at her family and decided that she would never be in such a situation again. She was determined to work hard so that she would make something of herself and never have to return to the homeless shelter.
Her first step was going back to school. She attended Sinclair Community College and received training in its culinary arts program. After she graduated, she launched a small catering operation. Here, she got the moniker, “Chef B”.
From Homelessness to Home Cooking
After a while, Brooke grabbed an opportunity to launch her own restaurant. She named it ‘Stuffed Enuff’ because most meals on the menu can get stuffed with a wide range of ingredients. Ingredients include spinach, pineapple, hash browns, tomatoes, eggs, jalapenos, and many more. The restaurant offers stuffed rolls, stuffed burgers, and stuffed meat that customers can customize with whichever stuffing they like. The customization possibilities are endless.
In addition, the restaurant also offers chicken wings and a selection of 8 dips. On Sundays, the restaurant also has a Soul Food menu that gives customers the option of take-out or indulging themselves in an all-you-can-eat buffet.
Stuffed Enuff opens daily at 8 a.m., and it closes at 3:30 a.m. on Fridays and Saturdays to serve the crowd that stays up late.
By offering something new and refreshing, the restaurant easily stands out from others, and it’s fast becoming a favorite—just like Coleman intended.
“I knew I wanted to do something different from what any other restaurant was doing,” Coleman said.
What Brooke Coleman has done is nothing short of monumental. By acting on her dream, she has achieved more than what most could have predicted. She is sure to be an inspiration to her children and many others.”
